Our 2007 Sauvignon Blanc leaps from the glass with notes of fresh Meyer Lemon and key lime. The subtle flavors of vanilla and a hint of oak rounds out the mouth from the addition of 11% barrel aged Sauvignon Blanc. Our 2007 Sauvignon Blanc was crushed, pressed and placed in Stainless Steel for yeast inoculation on August 27, 2007. The wine remained in Stainless Steel throughout fermentation. 900 Gallons of Sauvignon Blanc was placed into new French Oak Barrels and aged for five months.

Rotations were conducted twice daily. The wine underwent both primary and malilactic fermentation prior to being pressed on October 13, 2005. The wine was then moved to stainless steel to rack off the lees.

Our 2008 Le Mélange Rosé is a blend of Zinfandel, Cabernet Sauvignon, Syrah, Merlot, Petit Verdot and Cabernet Franc. By removing free run juice from the grapes before fermentation, we concentrate the remaining juice to make red wines with greater depth and intensity. The free run juice is then fermented to a dry finish, producing a beautiful rose colored wine with notes of fresh strawberries, sweet berries and hints of rhubarb. Served lightly chilled, this wine is springtime in a glass!

Our 2004 Cabernet Sauvignon was crushed and destemmed and then placed into 10 Ton Rotating Fermentation Tanks. The wine underwent both primary and malilactic fermentation in these tanks. The Merlot was crushed and destemmed and placed into 3,000 gallon pump over tanks and went through a similar process. After pressing, the wine was moved to stainless steel tanks to remove sediment and then transferred to French & American Oak between November 2004 & February 2005. The additional blends were purchased from a Sonoma Valley Winery.

Our 2003 Syrah was crushed and placed into a 1,300g stainless steel tank. Pump-overs were conducted twice daily. The wine underwent both primary and malilactic fermentation prior to being pressed in November 2003. The wine was then moved to stainless steel to remove the sediment prior to barreling in December of 2003. Barrel Aging: Barrel Aging occurred between December 2003 and January 2006 in predominantly American & French Oak, approximately 50% New Oak; Blends: The Wine was a blend of 85% Syrah & 15% Grenache.

Our 2007 Zinfandel bursts with flavors of blackberry jam, eucalyptus spice, pepper and anise, with a touch of vanilla competing slightly with the smoky aromas of French Oak. Flavor Profile
Our 2004 Syrah Dessert Wine (Port) is autumn in a bottle. The balance of ripe Syrah fruit and neutral spirits makes for a luscious elixir that coats the throat with notes of brown sugar, allspice and star anise. This sipping wine is best served at "cellar" temperature - 55 degrees. Pour with your favorite dessert or while watching the first leaves of fall tumble from the tree.

Our 2004 Syrah Dessert Wine was crushed and placed into a 1,300 Gallon Stainless Steel Fermentation Tank. We cold soaked the juice for three days to attain maximum color extraction prior to yeast inoculation. Pump overs were conducted daily. The wine then underwent primary fermentation. On September 23rd we added Aged and Non-aged Brandy and Neutral Spirits. The wine was pressed on October 21st. The wine was placed into barrels on December 20, 2004
Barrel Aging
Barrel Aging occurred between December of 2004 and February 2008. Barrels consisted of 40% new oak, predominantly American Barrels with French Heads. The balance was placed in one and two year old French barrels

Our 2007 Late Harvest Viognier abounds with stone fruit - peach and apricot are joined by pineapple, guava and honeycomb. This golden wine is perfect as an aperitif with blue cheeses and roasted almonds. Or finish your meal with Crème Brülée or fresh peach cobbler and a glass of this delicious nectar. Grown in a region quickly being recognized as one of the best sites for Viognier in California. Enjoy!
